Grains have shaped landscapes and civilisations for millennia, feeding both bodies and cultures. For thousands of years, they have been the foundation of human life, shaping societies through their cultivation, storage, and exchange. Yet today, much of grain farming prioritises maximum yield, focusing on efficiency at the expense of biodiversity and taste. Distancing us from the landscapes and ecosystems that we are part of and depend upon.

This work explores the potential of straw, a byproduct of grain farming, transforming it into materials that are both tactile and visually expressive. Using techniques such as tufting, felting, and weaving, the material samples suggest large-scale applications that reflect the surrounding local landscape. Each piece serves as a bridge between the natural world and human craft, drawing the field into our interiors and offering a tactile story of place.

The stable, as a space where the landscape momentarily comes indoors, serves as the inspiration for these works. It is a threshold—a meeting place of outside and inside, where grains and labour briefly rest before continuing their journey. The samples echo this liminal space, celebrating the cycles of growth and harvest while inviting a renewed connection to the land and its rhythms.

This project emerged with an initiative in Flevoland, The Netherlands, a region renowned for its extensive grain cultivation. Traditionally focused on producing grain for livestock feed and selected for maximum yield, this initiative reimagines grains’ potential by developing a local grain chain centred on human consumption, with a focus on health, flavour, and sustainability. By incorporating overlooked byproducts like straw into design, the project examines how craft and agriculture intersect to create new, meaningful materials.



	










These samples are more than explorations in material; they are proposals for a future where landscapes, craft, and natural cycles shape the way we produce and consume. They invite us to see fields not as distant or utilitarian, but as integral to our lives and the objects we create.

	The Netherlands is known for its large population of geese. Because of the abundance of open water and protein-rich grass, the geese tend to stay in the country and not fly further south. Their growing numbers have caused damage to agriculture, nature, and air traffic. As a result, around 40,000 geese are killed annually in the province of North Holland only. Only a tiny portion of these geese are used for consumption, while most are destroyed.

	Research has shown potential opportunities for using the culled geese but also highlights challenges. The Slow Food Youth Network, on behalf of the province of North Holland and the Fauna Management Unit of North Holland, organised the "Dag van de Wilde Gans" (Wild Goose Day). This event brought together individuals from diverse backgrounds involved in various aspects related to wild geese, such as hunters, chefs, policymakers, ecologists, students, and artists. The aim was to find ways to integrate the wild goose into the food cycle in a valuable and sustainable manner.

Billie van Katwijk was invited to showcase potential uses for the inedible parts of the goose. She demonstrated how to make paper from the feathers. At the "Dag van de Wilde Gans," visitors were encouraged to write letters to the geese on this paper, addressing the geese directly instead of just discussing them. These letters were then attached to kites made of feather paper, reminiscent of the decoy geese used by hunters. The kites were flown to ensure that the letters reached the wild geese.

Chicken Lab




	

The Low Food Lab, in collaboration with Flevo Campus, creates new culinary products and techniques to encourage fairer, healthier, and more sustainable eating habits. The lab collaborates with diverse experts, including chefs, artisans, scientists, and students, to find innovative culinary solutions for food-related challenges.



	One of the projects involved using chicken parts, which are often discarded. Chicken farmer Johan Leenders has been striving to repurpose his whole chicken, the Oranje Hoen and sell it at a price that reflects its quality and taste. A significant portion of the chicken is downgraded, as only 40% (consisting of breasts, thighs, and drumsticks) is typically used by consumers. The remaining 60% is considered low-grade chicken and is either exported to Africa (with all its consequences) or used as animal feed due to the lack of demand from consumers over here.

The lab has collaborated with several partners and experts to address this issue. However, due to the efficiency of the slaughterhouse, it is challenging to make changes to the system. For example, it is challenging to remove specific parts of the chicken without disrupting the hygiene system. Therefore, it was impossible to work with feathers or chicken feet. The process determines which parts are worthwhile and which aren’t, depending on the demand.

	Participating in the lab, Billie van Katwijk utilised chicken skins to create leather and developed bone china clay using chicken bones. Billie: “I enjoy working with low-value or ‘invisible’ materials to see what can be done with them. Seeing how an industry operates intrigues me. Glimpsing the hidden world behind a product like the Oranjehoen makes me wonder what design could do to give the hidden world – their existence all but forgotten by consumers – a purpose and beauty. At the slaughterhouse, I was struck by how a system is maintained that determines which products are valuable and which are worthless.”&#38;nbsp;

	Skin 
Billie made leather from the chicken skins. The preserved skin shows a symmetrical pattern, like reptilian leather. On the back of the chicken skin, you can see where the wings were and where large quills once sat embedded in the skin.

Bones
We can’t eat bones. They will always be a leftover material from meat consumption. Chefs Isaac and Jerrey provided the bones from which they had drawn broth. After cleaning the bones, they were fired to incinerate the organic material, a process not unlike cremation. Billie made bone china clay with bone ash as a main component. The shape of the egg out of clay references the bones' beginning. Billie currently develops tableware from chicken bone porcelain for a restaurant with the Oranjehoen on the menu.&#38;nbsp;

	Team Chicken Lab:
Chef and Head of Lab Jerrey Gontscharoff collaborated with a diverse group of experts: Sharon de Miranda (chef at Food Forum), Ivana Mik (fermentation specialist), Billie van Katwijk (designer), Isaac van Elden (broth specialist). This Lab was to be the first to feature a collaboration with experts from outside the food chain. Working with various disciplines, the team concentrated on chicken parts rarely or never eaten in the Netherlands. The publication of the lab results can be found here.

	Ventri Leather Goods
Since graduating from Design Academy Eindhoven
in 2017, Billie has continued developing the cow stomach leather. Ventri leather goods are available via Ventri’s website:&#38;nbsp;www.ventrileather.com.
	Billie: With Ventri, I transform cow stomachs from organs to leather. By doing so, I test the value of making objects from a material initially treated as a by-product in the food industry. I investigate how I can create awareness of the importance and potential of these overlooked materials. The leather goods of Ventri tell the stories of materials in transformation: the history of the stomach as a cow’s organs and the new life, context and function which it is granted within the project.

	When I saw a cow’s stomach for the first time, I did not know what I was looking at. I saw a skin-like material with different structures like honeycomb netting, thin ruffles and folds and textures reminiscent of fur and scales. I found the aesthetics of this material mysterious and so compelling that I spent the past several years working with the stomachs, resulting in the project Ventri.






	Cow stomachs are considered waste in the Dutch food industry, unfit for anything but dog food. For me, the rich, organic textures make these organs a fascinating material to work with. The four stomachs of the cow have different properties, each one shaped by its own function. Some are like winding landscapes; others are almost reptilian. Through the tanning process, I transform the raw, natural aesthetics of the stomachs into leather products, each object with its own special look and feel.

With Ventri, I question the separation of waste and value in our society, creating a cycle of products in which new life is granted to the stomachs after the industrial process. But not only the material changes; we and the industry can change too. I believe that awareness about the journey of changing materials can also allow for imagination and better care for our environment. Preparing the stomachs for tanning with the help of the meat processing workers requires close attention, care, and more time than the workers would usually spend with organs on the production line. As a consequence, their relationship to the “waste product” changes. My work enables me to interfere in this industry by bringing poetic associations; the production line becomes slow for once, making an exception to its usual fast pace and efficiency. Small scale and slowness create attention to the process, the workers and the materials. Through this alternative working method, room for dialogue appears, allowing for identification, rituals and new relationships with the material

Organ without&#38;nbsp; a Body
An organ outside a body is out of place and strange. It is an in-between phase between its past inside the body and its future as food or other forms. Usually, in the process between its animal past and its new form, all sorts of interventions are done to remove associations with its origin. Billie van Katwijk reassembles the organ without a body with respect for its source. She invites imagination by speaking to the senses. Through our senses, we can connect to the unconscious, emotion, and memory; these intense feelings can lead to action. With the Ventri cow stomach leather, Billie explores how changing the tactility, spatial qualities, and the scent of a cow stomach could intensify feelings of wonder and disgust. 





	

Billie proposes that the organ outside the body can be perceived as holding what Jane Bennett calls ‘thing-power’, meaning it can animate, act, and produce dramatic and subtle effects. Through artistic research, Billie investigates how organs outside the body can challenge the binary opposition between life and death. She aims for more attention to the ‘living’ side of these objects. Organ Without a Body was part of the exhibition Foraging for […] at Nieuw Dakota in June 2022. The installation Organ Without a Body consists of sculptures made from the Ventri cow stomach leather and ceramic livers containing an Organ Without a Body-perfume. Some visitors were observed secretly stroking and even cuddling the objects. Some were repelled by the completely artificial organ-scent, while others found it comforting. In this way, the thing-power that this organ outside a body possesses.

New Field


This clay was excavated in Nijmegen, NL, in 2019. It was covered with high grass, deaf nettles, and cow parsley. It yielded archaeological finds, and pheasants brooded on it.

Now, it is a memory: the clay of the north of Nijmegen is covered with sand and houses. Excavators pulled the lush landscape tightly into a dream from an architect's rendering.

The clay, a product of the river's timeless journey, has been a cornerstone of this landscape for centuries. It was excavated, shaped, and used by generations. The Roman and prehistoric inhabitants fashioned vases, pots, and amphoras from it, vessels that held their sustenance and their stories.

	





Billie van Katwijk preservates the landscape. She made an amphora from the local river clay that could conserve the raw clay. This amphora, a strange reminder from another era, is a tangible link to the past, a relict that allows us to reflect on a landscape that no longer exists and the moment it disappeared.

The amphora contains a piece of unprocessed clay for the area's new residents. The clay now belongs to them, and they can use it as they wish. They can scatter, bury, or craft something new with it.


New Field is part of Terra_Tory and was commissioned by Fabrikaat.

Designer and artistic researcher Billie van Katwijk is fascinated by nature: that endlessly shapeshifting growing, blooming, dying, sprouting phenomenon. From these natural cycles, all sorts of materials emerge. Some are treasured (gold, oil, diamonds), while other materials remain unseen or unappreciated. Billie van Katwijk unravels the beauty of these materials. Slaughterhouse waste becomes a luxury leather. A residue from the sewer shows its hidden colours when turned into a glaze. Cremation ashes are transformed into delicate porcelain. Van Katwijk believes in showing contradictions and taboos, but she doesn’t judge. Van Katwijk graduated from the Design Academy Eindhoven and holds an RMA in Artistic Research from the University of Amsterdam. She is currently based in Amsterdam, where she undertakes freelance projects for various companies and institutions while also pursuing her own design research.

	Mudernism

The MUDERNISM collection celebrates prehistoric design icons. Glazed with materials extracted from modern wastewater treatment. All living species drink water, but we as humans elevated ourselves above plants and animals by designing objects in which we give shape to the water before we drink it. Archaeologists discovered ceramic designs from around 6368 Before Present buried in the Dutch earth. Studio Billie van Katwijk pays homage to this pioneering Dutch design with a reimagining of a classic: the funnel beaker. We glaze the ancient mudshape with the residue of latest scientific explorations.

MUDERNISM is a glaze. The thin layer that separates us from our earliest ancestors.MUDERNISM consists of the most modern mud that we can distill from water: Kaumera. MUDERNISM gives you a hyper-prehistoric drinking experience.We are part of the cycle of water. We are temporary containers. We’ve always been and always will be.

Ventri Book

The Ventri Book! 64 pages showing the beauty and process of the cow stomach leather! The book shows how rich, organic textures of these animal innards make fascinating material.
